Pho! The ultimate comfort food. I can definitely eat any type of pho, everyday for the rest of my life and be happy.

This one is no fuss and probably one of the easiest.

Ingredients

4 pcs chicken thighs

1/2 package of pho rice noodles (cook based on package instructions)

1 small cinnamon stick

2 pcs star anise

1 large onion

1 Kaffir lime leaf (optional)

7 cups of water

2-3 tbsp fish sauce (adjust saltiness to your liking)

Salt to taste

Bean sprout, cilantro and lemon to serve upon serving

Optional Condiments:

Hoisin Sauce

Sriracha Sauce

**We usually have these condiments when we make pho with beef slices. However, you can also dip the chicken in this if tots like or mix a little into the soup.

Steps

1-Put in chicken thighs, quartered onion, star anise, cinnamon and leaf and 7 cups of water and bring to boil.

2-Turn heat to medium low/low and cook for 45min to 1 hour.

Optional: You can take chicken out half way so to shred, so that it won’t be too mushy and just put the bones back in. I always leave the chicken just the way it is because it’s easier and mushy chicken is easier for the kids to eat.

3-Add cooked noodles.

4-Serve with raw bean sprouts, cilantro and lemon or lime wedges; along with recommended condiments.
