It seems for the past month of January, the girls and Husband had been sick every other week. Olivia would go to school fine for a week and come home with something. She would stay home for nearly a week to recover from the cold she had and be fine the next week, only to get sick again that followed Friday. There are so many varieties of soups you can make for when one is feeling under the weather. A favorite of mine is Chicken Macaroni Soup with Turmeric. Sometimes I use spaghetti noodles cut up. Pretty much I love how pretty much any noodle or pasta can work with Chicken Soup.This version is super simple:

1 onion (diced)

2 carrots cut up to whatever pieces you prefer

1 teaspoon or 2 of turmeric

Salt to taste

Black pepper to taste

1 sprig or 2 of minced fresh parsley (optional, but brightens up the soup immensely)

1 package of chicken thighs (I usually buy the one that comes with 4 pieces per pouch from Costco)I seldom have time to measure out recipes, especially when I already created the dish a million times.

I usually dump everything onto the pot and let it cook for between 20-30 minutes. I find the chicken more flavorful when you don’t over boil it– and the soup more flavorful when you boil it longer, but the chicken is falling apart with not much texture and becomes bland.
